Fullsoon was born to tackle these issues head-on. The startup uses AI-powered predictive stock management combined with carbon tracking to help kitchens order smarter and operate leaner. By analyzing restaurant data, Fullsoon smooths out demand fluctuations and cuts unnecessary waste. Its predictive capabilities allow restaurants to anticipate needs more precisely, reducing guesswork and last-minute adjustments.
The idea came from inside Accor itself, few years ago. Hassan-Ali Chaudhary, a data scientist at the company at that time, witnessed the problem firsthand working with hotel restaurants. He imagined a technology-driven solution that could bridge forecasting, supply chain management and sustainability in one practical tool.
Innovation from within: Accor’s intrapreneurship program
Accor is deeply committed to reducing food waste as part of its global sustainability efforts. Creating a more sustainable food model is an essential focus, translated on the ground through a series of sustainable practices. Accor recognized the potential of Hassan-Ali’s idea early on. He pitched the concept to Damien Perrot, Global Chief Design, Technical Services and Innovation Officer, Premium, Miscale & Economy division, who led the creation of a tailored intrapreneurship program. This allowed Hassan-Ali to develop and test Fullsoon while remaining an Accor employe. This hands-on approach highlights Accor’s commitment to building innovation from the inside out. Fullsoon evolved rapidly and eventually became a standalone company with Accor as a shareholder. It’s a prime example of how Accor nurtures internal ideas and fast-tracks them to become market-ready solutions.
Accor really built a special intrapreneurship program for me. For six months I was still an employee working full-time on this idea with dedicated resources. That changed everything.

How Fullsoon transforms kitchen operations with AI
Fullsoon’s platform goes beyond forecasting. It provides restaurant teams with detailed, AI-driven guidance: when to schedule staff, how much of each ingredient to order and what quantities to prepare for specific meals. This streamlines supply chain management by automatically placing accurate orders with suppliers well in advance. By aligning labor and inventory precisely with forecasted demand, restaurants can cut costs and improve service quality simultaneously.
On the sustainability front, Fullsoon helps kitchens enter their recipes into the system and calculates the carbon footprint for each dish. It then recommends ingredient swaps to reduce environmental impact and helps restaurants communicate the dishes carbon footprint to customers. By making environmental impact visible to guests, restaurants can demonstrate accountability and transparency.
The results are measurable: a 6% margin increase, smoother operations and significant carbon footprint reduction. Fullsoon enables kitchens to optimize both profitability and sustainability simultaneously. This dual focus ensures that sustainability initiatives also make good business sense.
We achieved more than 94% accuracy on forecasting, reduced food waste by one-third and saved 20 hours a week in operations. That’s the power of AI when it’s built for real problems.

Scaling impact with purpose and global reach
Today, Fullsoon is rolling out across 1,500 locations with ambitions to expand to 5,000 kitchens worldwide.
